Inside the box sat the 6-inch Classic Mao Shan Wang Durian Cake ($78), its top dusted with delicate, unsweetened white chocolate shavings. Simple in appearance, yet the air was already thick with that unmistakable durian fragrance.

The first forkful was enough to silence the table. Beneath the soft vanilla chiffon and light Hokkaido cream lies a luxuriously thick layer — almost over an inch — of Mao Shan Wang durian purée. It’s rich, creamy, and full-bodied, with that signature balance of sweetness and subtle bitterness. That durian purée to me, tho, it’s the essence of durian perfection captured in silk.

My husband took one generous portion just before we headed out, then whispered with a laugh as we were seated at our son’s school concert, “I’m burping durian.” We both burst out laughing. That’s how gao, strong, and unmistakably durian it was.
